"Sashimi grade" and "sushi grade" have no legal definition. No federal agency certifies a fish as safe or fit for raw consumption under either label, and no inspector stamps a fillet with a grade the way one does with USDA beef. That absence of regulation doesn't make the terms meaningless, though. It makes them a proxy, and understanding what that proxy actually stands for, in terms of species risk, freezing protocol, and cold chain discipline, is what separates a buyer who's protected from one who's just hoping.

What reputable suppliers mean when they use these terms

In commercial trade, "sushi grade" and "sashimi grade" get used more or less interchangeably. Both are shorthand for fish somebody decided is fit to eat raw. But among specialty suppliers, the phrase is doing two different jobs at once, and buyers who don't separate them are working with half the picture.

One job is safety: has this fish been handled and frozen in a way that controls parasites and bacterial growth? The other is quality: color, texture, fat content, the things a chef judges by eye and knife. Marketing blends these into a single term, but they're not the same test, and a fish can pass one while failing the other.

John Burrows, technical director for the Alaska Seafood Marketing Institute, said: "This conversation tends to come up every summer, where we clarify that 'sushi-grade' or 'sashimi-grade' are essentially marketing terms. All that's really being talked about is that it's safe for raw consumption, which can be a varying threshold for different species and products. It's not as cut-and-dried as people think."

Nick Sakagami, an Osakana Master quoted on sushi-pedia.com, describes what a seller is actually weighing when they apply the label: bacterial load, temperature, parasite status, appearance, odor, taste, presentation, and time since catch. That's a multi-factor judgment call, not a single pass-fail test. Two suppliers can look at the same fish and land in different places.

Sashimi format raises the stakes on that judgment. Served as clean slices with no rice, no sauce, nothing to hide behind, every flaw in texture and aroma is exposed. That's part of why some operators are quietly dropping the term. Paul Osborne, chef and director of retail and restaurant operations at Santa Barbara Fish Market, told Today.com he prefers "premium grade" for anything served raw. Chef Cheng Lin of Shota Omakase in Brooklyn and chef Jihan Lee of Nami Nori have both declined to put "sushi grade" on their menus, citing how much variance exists even within a single species. For a commercial buyer, the term should function as a conversation starter. The protocol standing behind the term produces the actual safety outcome, and that protocol is what matters.

The FDA freezing protocols that govern parasite safety

Only one federally enforced mechanism governs raw fish safety, and it is a freezing requirement, commonly called the parasite destruction guarantee. The FDA recognizes three protocols: freezing at -4°F (-20°C) or below for seven days, freezing at -31°F (-35°C) until solid and holding at -31°F for 15 hours, or freezing at -31°F until solid and holding at -4°F for 24 hours. There are exemptions, and they matter. Certain farmed tuna and farmed salmon raised on formulated feed with no live parasites can skip the freeze requirement, with documentation. Wild salmon gets no such pass: Alaskan wild salmon can carry anisakid nematodes, so the "fresh" sashimi-grade salmon on a sushi counter has almost always been frozen and thawed, not served straight off the boat.

That freezing has a cost. It can degrade texture, especially in salmon, which tends to go mealy after a hard freeze. That trade-off is a real driver behind the growth of farmed salmon in the sushi supply chain, since parasite-free farmed fish can skip the freeze and keep its texture, even though farmed quality itself varies enormously.

Facilities built around this trade run specialized super-freezers designed to stop large ice crystals from forming, since those crystals are what wreck cell structure and texture. Some also use candling, holding a fillet up to high-intensity light to spot parasites invisible to the naked eye, a practice sometimes described in the trade as candling the fillets "to spot and remove Anisakis worms before packing."

Separate from parasites is histamine risk, or scombroid poisoning, a concern in tuna and mackerel specifically. Once temperature abuse after catch triggers histamine formation, no amount of later chilling reverses it. A fish can clear every parasite-destruction requirement and still be a mediocre product.

Carbon monoxide treatment reveals label theater

Some tuna, particularly cheap saku block tuna common in grocery stores and poke shops, gets treated with carbon monoxide gas to hold its color. The gas keeps the flesh looking bright red long after the fish would naturally have started to darken. Color, on its own, tells a buyer almost nothing reliable about freshness.

An untreated tuna loin has roughly two or three days before it darkens naturally, as Osborne told Today.com. A CO-treated loin, by contrast, may have been caught, frozen, thawed, gassed, frozen again, and vacuum-sealed, and it can still carry a "sashimi grade" sticker the whole way through. Regulatory treatment of CO gas varies by country, and disclosure practices are inconsistent, so a distributor sourcing internationally needs to ask the question directly rather than assume it's covered.

Three questions do most of the work here: has this fish been treated with carbon monoxide or another gas, how many times has it been frozen and thawed, and what's the actual harvest date rather than the pack date stamped on the box. The CO case is the cleanest illustration in the whole trade of a fish that's technically safe passing under a label that's commercially misleading. The label cleared. The quality didn't.

Tuna grading: the trade's closest approximation to a real standard

If any species in the raw seafood trade has something resembling a real grading system, it's tuna, and the system traces back to traditional Japanese categorization. It runs on four tiers: Grade 1, 2+, 2, and 3, judged on fat marbling, color, texture, size, shape, and general appearance. The premium or sashimi tier, Grade 1, shows deep cherry-red color and heavy fat marbling. Grade 2+ still clears the bar for raw service. Grade 2 shows some off-coloring and less fat and usually gets cooked instead. Grade 3 doesn't go raw.

Graders don't run a machine test. They cut a notch from the tail and pull a core sample from behind the gills, then judge by eye and feel, a process that stays inherently subjective even where it's most developed. No universal standard binds one distributor's Grade 1 to another's, and regional practice varies. Species compound the variation further: bluefin and bigeye get graded mainly on fat and appearance, yellowfin on color, and albacore isn't formally graded at all, left instead to private rating outfits in one country's market.

Buyers working with yellowfin need the trade's cut vocabulary too: loins, steaks, saku blocks, cubes, and the distinction between "natural" loins that keep the bloodline attached and "cleaned" loins with the bloodline removed for a more uniform color. Even inside the best-developed informal grading system the trade has, the standing professional advice is the same: build a relationship with a supplier worth trusting. The grading only works as well as the person applying it.

Species risk and cold chain integrity: what separates safe from unsafe raw fish

Saltwater fish get served raw far more often than freshwater fish, and the reason is parasitic. Freshwater species can carry parasites that pose a serious risk to humans, while saltwater species carry their own parasite risk, managed through the mandatory freezing protocols already covered.

Risk isn't evenly spread across species. Bluefin and yellowfin tuna are on the low end, helped by the parasite destruction exemption, alongside high-quality farmed salmon raised in closed, parasite-free systems. Wild salmon and cod carry more risk without proper freezing; cod in particular carries elevated risk when served raw. Less familiar species like white sea bass show up in crudo preparations and aren't inherently dangerous, but they demand the same cold chain rigor as anything else on the raw list.

Farmed salmon is its own trade-off. Fish raised in closed systems can skip the parasite-destruction freeze, but farmed quality swings wildly, and some carries antibiotic or chemical residue that has nothing to do with parasites. As Osborne told Today.com, "there's a lot of really bad farmed salmon out there." The word "farmed" is not, by itself, a quality signal in either direction.

Cold chain cannot be recovered once it's broken. Refrigeration doesn't restore freshness that's already been lost; degradation starts the moment the fish is caught, and it doesn't pause. Markets generally need product delivered within days of catch, properly refrigerated the whole way, to avoid real deterioration.

One harvest technique is ike jime, the practice of rapidly spiking the brain, bleeding the fish, and destroying the spinal cord at the moment of catch. Done right, it preserves flesh quality and stretches shelf life; a buyer can ask a supplier directly whether it was used. Confirmed species identity and country-of-origin labeling, harvest method and date, freeze history (one clean freeze versus multiple freeze-thaw cycles), disclosure of any CO or additive treatment, and documented cold chain from source to delivery form a practical checklist.

Seafood supply chains make these questions hard to answer

Between the boat or the farm and the final plate, a typical seafood supply chain runs through many intermediaries. Each one, harvester, processor, cold storage operator, logistics company, distributor, adds value, but each one also adds a chance for information to get lost or diluted.

Seafood doesn't move the way land agriculture does. It crosses ecosystems, national borders, and overlapping regulatory regimes before it ever reaches a distributor's dock, and foodservice buyers layer their own complexity on top by demanding small, frequent deliveries with tight freshness and species-accuracy guarantees, well beyond what bulk retail channels need to handle.

The scale involved is enormous. The global seafood market is projected to reach $270.43 billion in 2025, up from $252.67 billion in 2024, a 7% annual growth rate, and one country alone imports over $23 billion worth of fish and seafood every year from trading partners around the world. The raw seafood segment specifically is projected to grow 6.4% annually through 2030. That means demand for sashimi-grade product is climbing faster than the traceability systems built to track it have historically been able to keep up.

Putting those two facts together makes the practical implication uncomfortable: a label applied at the distributor level often reflects information that's three or four steps removed from the actual moment of harvest. "Sashimi grade" can end up obscuring supply chain opacity rather than resolving it.

FSMA 204 and federal traceability requirements for seafood distributors

The FDA's Food Traceability Final Rule, issued under FSMA Section 204, adds new recordkeeping requirements for foods on the Food Traceability List. Raw-service seafood sits squarely inside that list. It covers fresh and frozen finfish including tuna, salmon, and cod, crustaceans including shrimp, crab, and lobster, and bivalve mollusks including oysters, clams, and mussels, which is to say, precisely the products that get sold under sashimi and sushi grade labels.

Businesses covered by the rule have to be able to hand the FDA traceability data within 24 hours of a request. The original compliance deadline was January 20, 2026, but the FDA proposed a 30-month extension, pushing the date to July 20, 2028.

That extension buys time. It doesn't shrink the obligation waiting at the end of it, and distributors who put off building these systems until close to 2028 are setting themselves up for a much harder implementation than those who start now. As one technology vendor put it on provisioneronline.com, "capabilities like catchweight management, FEFO inventory control, and rapid traceability are no longer optional, they are foundational systems for modern seafood operations." The practical bind is simple enough to state directly: a distributor cannot credibly claim to sell sashimi-grade tuna or salmon while also being unable to produce a traceability record within a day of being asked. Those two claims can't both be true at once.

ERP and order management requirements for sashimi-grade products

Generic distribution software wasn't built for what sashimi-grade trade actually requires, and that mismatch raises problems fastest around catch weight, where the invoiced amount and the inventoried amount diverge. Seafood is sold by weight, but the item on the invoice and the item in inventory rarely weigh the same amount, since every fillet, loin, or whole fish differs slightly from the next. A system that treats a case of salmon like a case of a fixed-weight packaged good will misstate inventory and cost from the first transaction onward, and that mismatch compounds every time the product changes hands before it reaches a kitchen.
